Tasting notes:
Cherry · Cola · Delicate
Honduras is a country where coffee runs through the rhythm of daily life—where mornings begin with a cup, and connections are built over its warmth. In the Santa Bárbara region, high-elevation farms dot the lush, volcanic slopes, creating a perfect environment for slow-maturing coffee cherries. The altitude, fertile soils, and cool breezes contribute to a signature profile: naturally sweet, fruit-forward coffees with soft textures and refined acidity. Over the years, Honduras has emerged as a quiet powerhouse in specialty coffee, offering hidden gems like this expressive Geisha.
This lot is a Natural-processed Geisha grown at 1450–1550 MASL on the mist-veiled slopes of Santa Bárbara. The slow development of the cherry at these altitudes enhances its complexity and floral nuance. Using the Natural method, the whole cherry is sun-dried with care, allowing sugars and fruit oils to infuse the bean. The resulting cup is delicate yet vivid—notes of fresh cherry and subtle cola mingle with an airy sweetness, unfolding into a light, elegant finish. This is a coffee that invites quiet reflection and rewards a slower sip.
At Finca San José, coffee is more than a crop—it’s a heritage. For over 140 years, the Paz-Mejía family has cultivated these hills, each generation leaving its mark on the land. Arnold Paz-Mejía, now at the helm, carries this legacy with purpose. Trained in agronomy and passionate about sustainability, Arnold has transformed the farm into a haven for specialty varietals and thoughtful farming practices. His careful cultivation of Geisha trees—combined with deep respect for the land—results in coffees that speak both to tradition and innovation.
