The Experiment

One coffee begins four journeys.

Coffee from a single Guatemalan lot was divided into four portions. The farm, harvest, varieties and origin remained the same. Each portion then followed a different processing path.

By tasting the four coffees together, you can explore how fermentation influences aroma, acidity, sweetness, body and flavor.

The Reference

Mechanically demucilaged to minimize the extended fermentation stage and provide a reference point for the experiment.

Coffee 02

The Wild

Fermented using the microorganisms naturally present on the coffee and within its processing environment.

Coffee 03

The Bacteria

Inoculated with a selected Lactobacillus culture to explore how managed bacterial fermentation influences the cup.

Coffee 04

The Yeast

Inoculated with a selected Saccharomyces yeast culture to explore its influence on aroma, sweetness, body and complexity.
